Spiced Sweet Potato Soup Recipe: How to Make It

Ingredents:

  1. 2 tablespoon olive oil
  2. 1 large sized onion, (cut)
  3. 2 large size garlic cloves, (crushed)
  4. 1 medium sized fresh red chilli, (diced)
  5. 450g butternut squash, (cut and peeled)
  6. 3 medium sized sweet potatoes, (cut and peeled)
  7. 225g OR 4 medium sized tomatoes, diced
  8. 1.7 litres OR 7½ cups hot vegetable stock
  9. chopped fresh coriander  to serve

Preparation Steps:

Step 1: For the first 10 minutes of cooking, gently heat the oil in a big skillet and cook the onion, stirring occasionally, until tender. Cook the garlic and chilli for 2 minutes after they've been added.

Step 2: Cook the squash, sweet potatoes, and tomatoes for five minutes after they are added. Pour in the boiling stock, then cover and bring to a boil. Simmer for 15 minutes, or until the veggies are fork-tender, at a lower temperature.

Step 3: Blend in batches in a blender or food processor until the soup is creamy and smooth. Serve hot, garnished with coriander, after a little reheating.
