Potato Leek Soup Recipe

  1. 2 tablespoon vegetable oil
  2. 1 large size onion, greatly chopped
  3. 1 large size garlic clove, full crushed
  4. 450g fine leeks, chopped
  5. 225g fine potatoes, cut cubed
  6. 1.2 litres OR 5 cups hot vegetable stock
  7. 150ml or ⅔ cup fine crème fraîche

Preparation  Steps:

Step 1:When the oil is hot, add the onion and sauté for 10–15 minutes, or until the onion is translucent. One minute after putting in the garlic, turn the heat down to low. Toss in the leeks and simmer for 5 to 10 minutes, or until they're softened. Add the potatoes to the mix.

Step 2:Bring the mixture to a boil by adding the heated stock. In a medium saucepan, bring water to a boil, then lower the heat and simmer for 20 minutes.

Step 3:Blend in batches in a blender or food processor until the soup is creamy and smooth.

Step 4:The crème fraîche should be added to the soup when it is back in the pan. Serve hot after a gentle reheating.
