MUSHROOM AND HALLOUMI KEBABS:

 

Ingredients:

Halloumi cheese, 340g (12oz)

1 red pepper (bell)

1 green pepper (bell)

2 red onions, tiny

16 mushrooms (buttons)

For the marinade, combine the following ingredients.

12 lemon juice

4 tbsp extra virgin olive oil

1 smashed garlic clove

1 tablespoon oregano, chopped

salt and black pepper, ground

Preparation:

Step.1 Cut the halloumi into 2.5cm/1in squares with a sharp knife. Remove the seeds and ribs from the red and green peppers before cutting them into 2.5cm/1in squares. Red onions should be quartered.

Step.2 To make the marinade, whisk together the lemon juice, oil, garlic, oregano, salt, and pepper in a mixing bowl. Stir in the cheese, peppers, and mushrooms to fully coat everything in the marinade.

Step.3 Alternate threading the cheese and vegetables onto thin skewers. Cook for 8–10 minutes, stirring often, until lightly browned, under a hot grill (broiler). Serve right away.
