Easy Pea Soup Cooking Recipe

preparation: 2 minutes plus thawing cooking time: 20 minutes 


1. 1 tablespoon olive oil (Fine)

2. 1 small size onion, chopped 

3. 450g frozen peas, thawed 

4. 600ml OR 2½ cups vegetable stock 

5. 125ml or ½ cup double (heavy) cream 

6. salt and ground black pepper

Preparation Steps

Step 1: Add the onion to the olive oil and cook for a few minutes. Using a low heat, cook for 10 minutes. softened, but not browned or charred. Add the peas and the liquid and cook for a few more minutes.

Step 2: Blend the soup in batches in a food processor or blender.

Step 3: Bring the mixture back to a boil. Simmer for another 5 minutes on low heat. Stir Add salt and pepper to taste to the cream. Serve right away.
