Classic Borscht Recipe

Preparation : 10 minutes Cooking time : 45 minutes plus chilling



1. 1kg raw beetroot (Chopped and sliced it)

2. 2 medium size onions (chopped)

3. 1.2 litres or 2 pints or 5 cups vegetable stock

4. 2 medium size potatoes (diced)

5. 1 lemon Juice

6. Salt and ground black pepper

7. 4 tablespoon soured cream and chopped fresh dill to garnish


Step 1: Peel and finely shred the beetroot. Combine them with the onions, vegetable stock, and spices in a large saucepan. Bring to a boil, then reduce to a low heat, cover, and gently simmer for 30 minutes. Continue cooking for 15 minutes longer with the potatoes. 

Step 2: Strain the soup, discarding the veggies, and then add the lemon juice. Season to taste. Allow to cool slightly before covering and chilling in the refrigerator. 

Step 3: Garnish the soup with a swirl of soured cream and some chopped dill.
