CHEESE SOUP OF CALABRESE AND GOAT

Ingredients

1. 2 ounces (50 grams) of butter (4 Table Spoons)

2. 2 Chopped Onions

3. 2 Chopped celery sticks

4. 1 liter or 4 cups vegetable stock

5. 700g Chopped calabrese

6. 1 tablespoon olive oil

7. 175g chevre goat’s cheese

8. salt and ground black pepper

Preparation Steps:

Step 1: Using low heat, melt the butter. Cook for 5 minutes until the onions and celery are soft. Bring half the stock to a boil. Take it off the heat and add the calabrese. Calabrese should be soft after 15 minutes of simmering, so cover the pan and lower the heat.

Step 2: Stir in the goat's cheese and puree the soup in stages in a blender or food processor when it has cooled somewhat. Add the leftover stock back into the pan. Spice it up by adding salt and pepper to taste while it's still warm.

Step 3: Place croûtons on top of the soup and serve immediately.
